pinterest staples

For the amount of recipes I pin on pinterest, there aren't all that many that actually get tried around here. I've been trying to pin only things that I actually plan to make (or arent waaaaay above my skill level). Of the recipes I have actually gotten around to attempting, I have to say, most have turned out pretty great and have been made again and again over the last few months. Some have even made it onto my old-school handwritten recipe cards. So, thought I would share of a couple "pinterest staples" around the Postmus house & some twists we took on a few of them....




For this one, we used shredded chicken made in the crockpot instead of canned chicken (eww!). We also used garbanzo beans when we didnt have pinto beans and was great! We go light on the taco seasoning...one packet is a little much. We also add fresh cilantro, tortilla chips, mexican cheese, and a tiny bit of sour cream when we serve it. Sooooo good! 




I've now made these pumpkin pie bites for three different fall events. Delicious. The recipe says to use a pie shaped cookie cutter, but works fine with a circle shape. I don't put chocolate on it, but usually serve them with whipped cream and sprinkle pumpkin pie spice on them. Make sure the crust doesn't get too thin. 





I'm not a huge cookie person, but try to have cookies in the house for Ross' lunches. I usually don't get too tempted to eat the cookies I make him, but these were a whole different story. So good! 





This has become a dinner go-to around here. We don't always add the green onions if we don't have them around and we use a mexican mix of cheese from costco instead of just cheddar. We also sometimes add salsa verde, enchilada sauce, or black beans. 





We only made this once this summer and it was pretty amazing. We impressed ourselves with how good it was. The recipe in the link is for more than just the marinade, but we just marinaded chicken and ate that with cous-cous. 






I've made these for Ross lots of times. Its a go-to and always turns out great.





Maybe the most used recipe around here. Most work-day mornings, at least one of use makes some variation of this smoothie. You don't need to follow the recipe exactly. For a single serving, we usually use 1/2 C. oatmeal and blend that first, then add 1/2 C. milk or yogurt or combination of the two (I like vanilla almond milk!), then add a frozen banana. Other things we add sometimes: pumpkin pie spice, malted mix, ground coffee (tiny bit!), or ground flax seed for some extra fiber.
